Pink Bubbly Cocktails for Valentine’s Day

Who needs to go out on a date when you have Champagne and Prosecco cocktails?
Strawberry Mint Prosecco

1 mint leaf

3 handfuls of strawberries

Bottle of Prosecco or other sparkling wine
Using the back of a spoon, sieve the mint leave and strawberries into a bowl. Keep chilled until ready to serve, then add a small amount of purée to each glass (serves 6) before topping up with fizz.
Pink Prosecco Punch Pitcher

Can of ginger ale
-
Pomegranate juice
-
Raspberries, strawberries and peaches

Bottle of Prosecco or other sparkling wine
In a pitcher, add a bottle of Prosecco with a can of ginger ale and quarter cup of pomegranate juice. Add raspberries, sliced strawberries and sliced peaches for garnish!
Strawberry Vodka Champagne

90ml Champagne or sparkling wine

7ml vodka
-
7ml Strawberry brandy
-
Serve over ice
After adding ice, pour in the vodka, the brandy and then gently the sparkling wine.
Pink French 75

15ml lemon juice
-
7.5ml sugar syrup

Rosé Champagne or sparkling wine
Method: shake the gin, lemon juice and sugar syrup together with ice then strain into the flute. Top up with your bubbly and garnish with a lemon twist.
Classic Rosé Champagne Cocktail

Sugar Cube
-
Bitters
-
Chilled Rosé Champagne
Add the sugar cube to the bottom of the glass and soak with a few dashes of bitters. Top up with Champagne!
Kir Royale

1 part crème de cassis
-
9 parts Champagne
-
Raspberries for garnish
Add the crème de cassis to the bottom of the glass then top up with Champagne. Best served in a Champagne flute.
Sour Witch

40ml absinthe
-
20ml almond syrup
-
12ml Lime Juice
-
3 or 4 Sour pitted cherries
-
Champagne or sparkling wine
Method: In the bottom of a mixing glass, mix the sour cherries in the lime juice and almond syrup. Add the absinthe with ice and shake very well. Strain into a chilled glass and top with sparkling wine.
