Tuna and Vintage Slovenian Sparkling Wine

You sit down at a table and a glorious vintage of Slovenian Sparkling Wine is placed by your side, the waiter takes of the foil and removes the cork with a little hiss, the perfect sound when opening a bottle of fizz, the waiter says with compliments of the house, we’d like you to pair this with our fresh tuna steaks cooked with honey, black pepper and chilli.
Without hesitation, you agree, and then the waiter pours you a glass, it’s time to dive into one of Slovenia’s most well-known Sparkling Wine producers, Radgonska Gorice.
Radgonska Gorice
Radgonske Gorice is the oldest Sparkling Wine producer in Slovenia, they started over 160 years ago in 1852, they produce 4,500,000 litres of wine every year, with a production that high, it makes sense that Radgonske Gorice is the largest producer of Sparkling Wine in Slovenia.

Aroma – “👃Toasty, freshly baked brioche and yellow stone fruits on the aroma.”
Flavour – “👅A citrus burst, with toasty, minerals and yellow fruits on the palate.”
This Slovenian Sparkling Wine Won a Silver Medal in the Zesty & Zingy Category at The Glass of Bubbly Awards 2020.
The Tuna
Dinner is served, says the waiter as your palate is gently placed in front of you, its time to pair the food with the wine, they’ll either clash or work together in harmony, only time will tell…
Pairing Notes – “The tuna is sweet with dark golden honey and spicy with hot black pepper, the sparkling wine comes in and neutralises that effect, which then allows the fresh savoury tuna flavours and citrus from the Sparkling Wine surf through until the end.”
This Tuna Dish used the following ingredients and was cooked accordingly.
●Tuna
●Champagne Robert Allait Honey
●Black Pepper
●Natural Chilli /Chilli Spray
●Olive Oil
1.Pour a little oil into your frying pan.
2.Place in your Tuna, it’ll take about 20 minutes.
3.About 5 minutes in turn over and pour a teaspoon of honey.
4.About 10 minutes turn over again and put a sprinkling of black pepper.
5.15 minutes in turn back over and put on some Chilli Pepper spray.
6.Leave for 5 minutes and then serve on a bed of rocket.
