So, you simply have to look out for a few easy to find ingredients from your refrigerator to create these three amazing ricotta-based crostini.

1. Fruity Ricotta Crostini. Preheat the oven to 200 degrees C. Slice a sourdough baguette into ½ inch thick diagonal slices. Brush the slices with extra virgin olive oil. Toast it in a single layer until light brown and crispy in texture. Whip a cup of ricotta cheese to get a smooth texture and then spread a heaped tablespoon of ricotta over the toasted bread slice. Top the cheese with a layer of drained apricot slices and green apple slices. Place a few raisins and a walnut on top of the fruit layer and then generously drizzle orange blossom honey on top. Your appetizer is ready to be served!

2. Smoked Chicken Crostini. Preheat the oven to 200 degrees C. Slice a baguette into ½ inch thick diagonal slices. Brush the slices with extra virgin olive oil. Toast it in a single layer until light brown and crispy in texture. Whip a cup of ricotta cheese with 1 tablespoon of chopped chives, 2 tablespoons fresh chopped parsley, 1 tablespoon fresh chopped dill, juice of ½ a lemon, and salt to taste. Mix all the ingredients to get a smooth texture and then spread a heaped tablespoon of ricotta mixture over the toasted bread slice. Top the cheese with a layer of cubed smoked chicken and then lightly sprinkle black pepper powder on top. Your appetizer is ready to be served!

3. Caramelized Onion, Roasted Tomatoes, and Ricotta Crostini. Preheat the oven to 200 degrees C. In a bowl, add ½ cup of halved cherry tomatoes, 1 tablespoon extra virgin olive oil, 2 cloves grated garlic, ½ teaspoon Italian seasoning, salt, and black pepper powder. Mix it all and then roast the tomatoes in a baking tray (in a single layer) until it turns soft. Then, slice a French baguette into ½ inch thick diagonal slices. Brush the slices with extra virgin olive oil. Toast it in a single layer until light brown and crispy in texture. In the meantime, heat 1 tablespoon of extra virgin olive oil in a pan. Add ½ cup of sliced and halved onions, 1 teaspoon of sugar, and 1 tablespoon of red wine vinegar in it. Cook the onions on low flame until they start to caramelize. Whip a cup of ricotta cheese with 1 tablespoon chopped fresh basil leaves until smooth in texture and then spread a heaped tablespoon of ricotta over the toasted bread slice. Top the cheese with a layer of caramelized onion and roasted tomatoes. Your appetizer is ready to be served!
