Danebury Coassack English Sparkling Wine

Danebury is an award-winning boutique English wine producer, located on a stunning private estate in Stockbridge, Hampshire, formerly the site of a prestigious racehorse training yard. Seven acres of beautiful organic vineyards produce a sparkling brut of exceptional quality, which can be found in many of the best restaurants and hotels in and around London and South East England.
Danebury’s expert winemaker Vince Gower has been producing quality English wine for over 20 years. Vince is one of England’s first modern wine makers, having won dozens of national and international awards.
His approach entails minimal intervention, with the pressing, cold fermentation, transferring and filtering process carried out with the utmost care, ensuring the delicate nature of the juice is preserved and the character ‘terroir’ of Danebury Vineyards is fully expressed in the finished wine.
Using only natural ingredients such as Bentonite clay for clarifying, Danebury wines are suitable for vegetarians.
Cossack
The vintage sparkling wine is made from a blend of the Auxerrois Blanc and Rulander grape, using the traditional bottle fermentation method and aged for at least five years on its lees. The name Cossack is taken from the Danebury-trained 1847 Epsom Derby winner.
Tasting notes: Behind the white flower fragrances on the nose, there is a depth of fruit and a mix of flavours, the palate has mid-richness of greengage and pear. An underlying freshness lifts the fruit, racy and bright at the back with pink grapefruit and crisp apple. The finish is citrusy and flinty.
