Lyme Bay, English Sparkling Wine from Devon
26th March 2016
Lyme Bay is a small, dedicated West Country winery located Devon’s beautiful Axe Valley.
Lyme Bay are inspired by traditional recipes, but still seek to push the boundaries, so they use the most up-to-date production techniques and employ some of the country’s most talented winemaking experts.
In 2008, the winery embarked on a new adventure to make outstanding English wines embodying Lyme Bay Winery’s fruit-driven, award-winning ethos. Their range includes 3 still and one sparkling wine.
They took their time to find the perfect land and in 2010 finally planted 26,000 vines. With passion and hard work, they were rewarded with an excellent first harvest in Autumn 2014.

“Our fruit-driven sparkling wine displays refreshing lemon and green apple notes, with a vibrant and creamy mousse finish.”
The fruit was hand harvested from the 1st to the 5th October 2014 at the point of optimum flavour ripeness. The grapes were carefully de-stemmed and crushed, then gently pressed to protect the delicate flavours.

Lyme Bay also create sparkling wines from fruits in a similar way to the traditional method. They use high quality Chardonnay juice combined with either fresh Herefordshire strawberry juice, or elderflowers picked from fields surrounding the winery.
They also have Elderflower sparkling and Strawberry sparkling.
